An Eagle County local for over twenty years, Vail Valley Food Tours owner Matt Timmerman is a huge fan of Colorado. He describes moving to the state at age seventeen as the best decision he could have made. After graduating from the University of Colorado at Boulder with a biology degree, he attended culinary school at the Art Institute of Colorado. After that he worked in a variety of Vail Valley restaurants including local pizza favorite Pazzo’s and fine dining Beaver Creek establishment Toscanini. In addition to spending time as a chef, Timmerman was also a white-water rafting guide for two decades.
All these years later, his combined experience with food and guiding inspired him to create Vail Valley Food Tours as a way to showcase the culinary and libation options the town has to offer. When he’s not guiding, Timmerman can be found spending time on the mountain or on the river with his wife Nicole and sons Logan and Miles.

As a budding chef and foodie, Freddy came to Colorado to pursue his dreams of an outdoor lifestyle. When he is not guiding food tours, he is guiding fly-fishing adventures around the valley.
